Coffees from Yirgacheffe in southeastern Ethiopia have a reputation for being some of the most intriguing and provocative coffees produced in Ethiopia. Growing between 1900 and 2000 MASL the region's microclimate manifests itself in the YirgZ’s flavor profile of floral, apricot and honey. After harvesting, the coffee is fully washed and then dried on raised beds. Extra care is taken to protect against the powerful midday sun. The Z in YirgZ stands for zero defect which refers to the YirgZ containing no defects. Defects are singular bad beans or foreign materials found in most coffees. Defects come from insects, unhealthy trees or from poor processing practices. Most specialty coffees have their defects sorted out, however, a small number may remain and can affect the flavor profile. The removal of every defect in the YirgZ is done through mechanical sorting as well as groups of women, who sit at conveyor belts and cull through each individual bean. These women are paid twice as much to sort the YirgZ versus other lots of coffee. With the complete removal of defects the sensational flavor profile of this coffee is guaranteed to be uniformly maintained throughout the entire lot.
